Mama Pupkin's Recipe for Herring in a Fur Coat:[]
- A herring
- 3 boiled potatoes
- 1 boiled beetroot
- 6 spring onions
- 1 jar oil-cured black olives
- 2 hard-boiled eggs, sliced.
Scale and dice herring into 1-inch pieces. Peel potatoes and beetroot and dice them into 1/2-inch pieces. Chop spring onions into 1/4-inch pieces. Spread herring pieces on the bottom of the serving bowl, cover with spring onions, then potatoes, then beets. Spread mayonnaise over beets and decorate with olives and slices of egg. Serve chilled.
